Question about the Shopify payment processing ecosystem: Is there a world where you would need both Shopify Payments and something like Stripe? Do they serve different purposes?

Not for transactions running through Shopify, in the US. It's possible you'll need two processors if you're operating a Shopify store in more than one market where Shop Payments isn't supported, but Stripe is. Additionally, if you're doing anything outside of Shopify (custom work, services, wholesale) you can use Stripe for that but they you're reconciling things manually between the two.
